Pineapple Upside

Instructions:
1. Preheat your oven to 350°F (175°C).
2. Melt 1/2 cup of butter in a 9-inch round cake pan over low heat. Once melted, remove from heat and sprinkle brown sugar evenly over the melted butter.
3. Arrange the pineapple slices on top of the brown sugar, placing a cherry in the center of each pineapple slice if desired.
4. In a medium bowl, whisk together the flour, baking powder, and salt.
5. In a separate large bowl, cream together 1/2 cup of softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, and beat well after each addition. Stir in the vanilla extract.
6. Gradually add the dry ingredient mixture to the creamed butter and sugar mixture, alternating with the milk. Begin and end with the dry ingredients, mixing well after each addition.
7. Carefully spread the batter over the pineapple slices in the cake pan, making sure to spread it evenly.
8. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
9. Once baked, remove the cake from the oven and let it cool in the pan for about 5 minutes.
10. Place a serving plate on top of the cake pan, then carefully invert the cake onto the plate. Lift the pan off slowly, allowing the pineapple slices and caramelized sugar to release onto the plate.
11. Allow the cake to cool completely before serving.

Once the Pineapple Upside-Down Cake has cooled, you can serve it as is or with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy!
