Indulge in the rich flavors of homemade Butter Tart Squares featuring a buttery shortbread base and a decadent brown sugar filling. Whether you prefer them with or without nuts and raisins, these squares offer a delightful twist on the classic dessert, baked to perfection in just one hour!
Ingredients:
Base Layer:
1 cup of unsalted butter, softened to room temperature
½ cup of confectioners’ sugar
2 ¼ cups of all-purpose flour, sifted
Butter Tart Filling:
½ cup of unsalted butter, softened to room temperature
1 cup of light or dark brown sugar, firmly packed
2 tablespoons of all-purpose flour
4 large eggs, preferably organic
2 teaspoons of pure vanilla extract
¾ cup of dark corn syrup
2 tablespoons of white vinegar
1 cup of optional ingredients such as raisins, currants, or chopped walnuts (a combination of ½ cup currants and ½ cup chopped walnuts is recommended)
Instructions:
For the Base Layer:
Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper, allowing it to overhang on the sides for easy removal.
In a large mixing bowl, cream together the softened unsalted butter and confectioners’ sugar until fluffy.
Gradually add the sifted all-purpose flour to the butter-sugar mixture, creating a thick and homogeneous dough.
Transfer the dough into the prepared baking pan, pressing it down firmly to create an even base.
Bake in the preheated oven for 15 to 20 minutes, or until the surface is set and achieves a pale golden hue. Remove from the oven while maintaining the temperature.
For the Filling Layer:
While the base layer bakes, prepare the filling. Beat the softened unsalted butter, brown sugar, and all-purpose flour until fully combined and smooth.
Add the eggs and pure vanilla extract, beating well after each addition.
Incorporate the dark corn syrup and white vinegar, stirring thoroughly. Fold in optional ingredients like raisins, currants, or chopped walnuts if desired.
Once the base layer is out of the oven, pour the prepared filling evenly over it.
Return the pan to the oven and bake for an additional 30 to 35 minutes until the filling is set and no longer liquid when gently nudged.
Allow the squares to cool to room temperature. Use the overhanging parchment paper to lift them from the pan onto a cutting board.
Slice into desired squares with a sharp knife. Trim edges if needed.
